Korean inspired beef sliders with spicy pickles

Pickles:

Score pickle skin with a fork and slice. Put slices into a mason jar.

In a small bowl, combine:

1/4 C rice vinegar

2 Tbsp sugar

1 - 2 minced garlic cloves

1 tsp pepper flakes

Dash of chili crisp (optional)

1 tsp toasted sesame seed oil

A couple of shakes of sesame seeds


Stir above ingredients until the sugar is dissolved and pour over the cucumbers in the jar. Top off the jar with hot water and refrigerate. They will keep up to a week in the refrigerator.


Burgers

2 pounds of ground beef - browning in oil while adding the following:

Salt and pepper

4 garlic cloves, minced

1 inch of peeled, grated ginger

1/4 C sliced green onions, white and light green parts

1/3 C brown sugar

Rounded tsp of garlic chili sauce

1 rough chopped plum

1/4 C soy sauce

1 crumbled Thai red chili (or increase garlic chili sauce to 2 tsp)

Cook until plum pieces break down and integrate. Remove from heat and add a splash of sesame oil


Serve on slider buns with the pickles
