Introduction

This Maple Pecan Granola recipe is not only delicious, it is easy to make and cost efficient.

Ingredients Overview

  • 4 1/2 cup rolled outs

  • 2/3 cup melted coconut oil

  • 1/2 cup maple syrup

  • 1/4 cup honey

  • 1 tsp vanilla

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 1 cup chopped pecans

Preparation and Cooking Process

  1. Preheat oven to 300F; line a 15x18 jelly roll pan with parchment paper.

  2. Mix all ingredients in bowl and spread evenly on parchment - press down with a spatula.

  3. Bake 10 minutes, stir and press down with spatula. Bake another 10 minutes.

  4. Remove from oven and cool on pan. Granola hardens as it cools.

Customization Ideas

  • Adding dried fruits after baking for texture contrast.

  • Swap out 1/4 cup of the maple syrup for 1/4 cup of brown sugar.

  • Add coconut flakes (sweetened or unsweetened).

  • Swap out the pecans for chopped walnuts or almonds.

Storage and Serving Suggestions

  • Store in an airtight container.

  • Freeze for longer term storage.

  • Serve in a bowl with milk and a sliced banana, use it in a fruit and yogurt parfait, or snack on it straight from the container :)
